Our limited edition single variety cultivar extra virgin olive oil is sourced from the prized Eastern Roman Nabali olive trees native to the environs of Jerusalem, known locally as ‘Rumi’. Our attention to small scale and historical methods, using artisanal harvesting and granite grindstone cold-pressed techniques, results in an organic, unfiltered, premium quality extra virgin olive oil that is complex, robust, herbaceous, and buttery with slight peppery notes prized by our ancestors and connoisseurs worldwide.
